I’m blue da bo di da bo di and I believe I can fry ….

First things first! If blue cheese isn’t your thing? Simply skip this recipe. This is a quick and simple meal to make. You’ll need some gnocchi. I’m using a pack from the local shop. You could make your own if you want. However then it wouldn’t exactly be a quick and simple meal 😛

Gnocchi are various thick, soft dough dumplings that may be made from semolina, ordinary wheat flour, egg, cheese, potato, breadcrumbs, cornmeal, or similar ingredients, with or without flavourings of herbs, vegetables, cocoa, or prunes.

There are only 4 items in this meal (and a splash of olive oil to fry the onions … butter would have more flavour)

The Gnocchi take 1 minutes from boiling to cook or so the packet tells me. That means you’re really just going to be waiting on the onion to cook. Get that chopped as quickly as possible. I’m using a decent sized onion here. You could use two or three shallots if you wanted. The main thing is you’ll want to cook this well cooked for around 10 minutes. It serves just 2 people as well. You could add more mushrooms if you want. I used 6 medium mushrooms.

Throw it on the pan and get it frying away with a dash of olive oil.

Chop up your mushrooms as well. I’ve gone for slices of muchroom, not too large, not too small.

After the onions have been on for 5 or 6 minutes throw in your mushrooms as well. Now would be a good time to boil the kettle for your gnocchi.

I’m skipping the gnocchi step. Put in pot .. add a pinch of salt, add boiling water and bring it back to the boil. Cook for another minute or two (Check the instructions on the pack)

While everything is cooking take some blue cheese. I’m using a little under half a pack.

I made this into 4 slices and chopped them up into 1cm pieces (not too big not too small)

Drain your gnocchi and throw them into the pan with your mushroom and onion. Give it a stir around … it doesn’t matter if there’s a bit of liquid. Add your blue cheese scattering it around the pan.

Don’t stir this! Put the lid on and give it about 2 minutes until it has started to melt but isn’t completely melted.

Don’t stir! Serve.

Not stirring means you’ll have a nice mixture of tastes or else it’s going to all just take on the blue cheese taste. This way you decide on the plate how much flavour you’re getting with each bite.
